Linzergeback

What is this? This is my feeble attempt at trying to revive my long-ignored craft blog.

Since I started work with the Preservation of Monuments Board, coupled with some of my other external commitments, life and school - I haven't really found the time to go into the kitchen and bake/cook something proper.

I baked these before some time back in January but they were too ugly to be posted up. They are still ugly but they are better looking this time round - and better tasting too!

I was supposed to fill them with jam? But I can't find any in the house so I will probably add them tomorrow.

Recipe taken from here. Her's looks wayyyy better than mine.

Recipe copied here in case you can't access the page!

Ingredients:
220g warm, unsalted butter
80g icing sugar
1 egg
1 egg yolk
300g flour (all purpose should work fine ;) )
1 tbls vanilla sugar
lemon zest (1 lemon)
pinch of salt
Strawberry or raspberry jam for the filling
Dark chocolate and a bit of chocolate for the icing.

Recipe:
Preheat the oven to 200°C.
Mix together butter, sugar, vanilla sugar, lemon zest and salt until fluffy. Beat together egg + egg yolk and combine with the butter mixture. Then fold in the flour.
Line a baking sheet with baking paper. Put the mixture in a piping (icing) bag and form 3-5cm long lines.
Bake for 10 minutes.
(Note: mine were done after about 5-6 minutes, it really depends on the oven. Take it out when they look tan.)
Now take half of them and put jam on the flattened side, then piece together the rest and dip one end in chocolate.
