Penne All'Arrabbiata



Woke up today with quite an itch to cook. Unfortunately due to my laziness, what I am able to whip up is limited to what is available in the house - which often means pasta. In any case, I decided to try something different today and tried my hand at Arrabbiata. It wasn't too bad even though I did not follow the recipe strictly. At least C appreciated it and said it was nice!

Penne Arrabbiata

Serves 4
Preparation: 10 min Cooking: 30 min

6 tbsp oil
2 cloves garlic
1/2 fresh chilli, de-seeded and chopped
500g canned chopped tomatoes, drained
350g penne lisce
1 tbsp chopped fresh flat leaf parsley

Instructions:
1. Heat olive oil in frying pan, add garlic cloves and chilli and cook till garlic browns before removing them from the pan.
2. Add tomatoes and season with salt and cook for about 15 minutes
3. Cook the penne in a large pan of salted, boiling water until al dente then drain and add to frying pan.
4. Toss over a high heat for a few minutes.
5. Serve!

Things that I did different from this recipe:
1. Forgot to deseed the chilli
2. ended up chopping the garlic
3. added a few spoons of tomato puree
4. skipped the parsley and added parmesan
5. served with some polish sausages i found in the fridge!
