Breaded Lemon Chicken


I spent the weekend at Caleb's and we mostly stayed in with me attempting to pathetically work on some of my five essays left for the semester, and him reading and playing Diablo II. It was a nice weekend, yet slightly crazy, of yelling and laughing.

Today after doing some grocery shopping, I whipped up a really nice and fantastically simple meal of Breaded Lemon Chicken. It is supposed to be Lemon Parmesan but I only had Cheddar so, now it's Lemon Cheddar Chicken!


Simple mixing work and popping it into the oven. I prefer thigh meat to breast meat so it required a slightly longer time in the oven.

As for the pumpkins and the capsicums - I simply drizzled a little olive oil over them and flipped them over whenever I had to flip the chicken. I know Pumpkins go well with honey as well, so we might try that the next time!

It really was an easy - no fuss and cheap meal. It probably did not cost more than 6 dollars a person to do such a lovely meal like this one. Moreover, it cooks fairly quickly in the oven so you may go on to do other things while waiting for the chicken to bake!


The conclusion of the meal was a nice, crispy, crusty and slightly salty yet tasty juicy chicken, complimented terribly nicely with spicy capsicums and sweet pumpkin!

On another note - I managed to find a way around the bad lighting of Caleb's dining room. He has a fantastic balcony that overlooks the entire East Coast and provides a fantastic view with great sea breeze. Here's a couple of pictures to show you what it is like in the evening!

Ingredients

  • 1 tablespoon vegetable oilLink
  • 1/2 cup Italian seasoned bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons lemon and herb seasoning to taste
  • 2 teaspoons garlic powder
  • 1 teaspoon chopped parsley
  • black pepper to taste
  • 1 egg
  • 1 tablespoon butter, cut into small pieces
  • 6 skinless, boneless chicken breast halves, thinly sliced

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Coat a baking sheet with 1 tablespoon vegetable oil.
  2. Mix together the bread crumbs, Parmesan cheese, lemon herb seasoning, garlic powder, parsley, and pepper in a large bowl. Beat egg in a small bowl.
  3. Dip chicken breasts in egg, then in bread crumb mixture to coat. Place coated chicken on greased baking sheet and top evenly with butter pieces.
  4. Bake in the preheated oven until crispy and cooked through, about 7 minutes per side. Drain chicken on paper towels to remove excess oil before serving.
