Drop Biscuits, like the ones from Popeyes!
Was looking around to find something more breakfast material and I came by this drop biscuit recipe (fitfool@livejournal). It's delicious! I used buttermilk instead of normal milk to give it a nicer flavour. But milk is just as good! Eating this with jam or butter will be a perfect morning breakfast. It's very light so no need to worry about heavy stomach!! Hard on the outside and soft on the inside!!
BTW if your mixer is not too strong, please mix slowly section by section of your bowl if not your mixer will spoil! the dough is thick!
Drop Biscuits
Prep time: 10 minutes
Cook time: 10-15 minutes
Yield: 12 biscuits (server 2 biscuits per person)
3 cups white flour
3 tablespoons sugar
1 1/2 tablespoons baking powder
3/4 teaspoon salt
1/2 cup butter (1/2 stick)
1 egg
1 egg white
1 cup milk
- Preheat oven to 400 degrees.
- In a large bowl, blend together flour, sugar, baking powder and salt.
- Use a pastry blender (or fork) to cut in the butter.
- In a small bowl (or large cup), mix the wet ingredients. Beat the egg and egg white together. Mix in the cup of milk.
- Blend wet ingredients with the dry ingredients together until sticky dough forms.
- You can plop on a greased cookie sheet OR roll out on floured board to 3/4" thick and cut with biscuit cutter. [Dough was really sticky. I can't imagine being able to roll it out. I just plopped the dough into 12 mounds on the greased cookie sheet.]
- Bake 10-11 minutes in a 400 degree F oven. [I tried to brown it by baking another 5 minutes but it was barely browned. Didn't want to bake longer lest they become too dry.]
