Oreo Cheesecake with Chocolate Buttercream Icing

Hi ya'll. To all those cynics out there who think that i've run out of stamina and interest because i have not updated in two days.. you are wrong!! I've been fairly busy, scuttling around for school and getting ready for university. Things are a little stressful around me now, so I decided to bake an oreo cheesecake today when I finally had the time. My mum's birthday is also coming soon (and since i won't be able to celebrate it with her most probably..) I decided to bake it for her with nice buttercream frosting!!

Please take note, don't overbeat the cream cheese when you're folding in the eggs because it creates too much air pockets that causes the cake to crack on the surface when it is baking. Also, i recommend a slightly lower temperature, perhaps 340 F/160 C when baking because my cake turned out brown ): nonetheless, it tastes AWESOME! as usual of course ;)

PHILLY OREO Cheesecake

Ingredients
24 OREO Cookies, divided
3 tablespoons butter, melted
3 (250 g) packages PHILADELPHIA
Brick Cream Cheese, softened
3/4 cup sugar
1 teaspoon vanilla
3 eggs

Directions
Heat oven to 350 degrees F. Place 16 of the cookies in resealable plastic bag. Flatten bag to remove excess air, then seal bag. Finely crush cookies by rolling a rolling pin across the bag. Place in bowl. Add butter; mix well. Press firmly onto bottom of 9-inch springform pan.

Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs, 1 at a time, beating just until blended after each addition. Chop or crush remaining 8 cookies. Gently stir half of the chopped cookies into cream cheese batter. Pour over prepared crust; sprinkle with the remaining chopped cookies.

Bake 45 min. or until centre is almost set. Cool. Refrigerate 3 hours or overnight. Cut into 12 pieces. Store leftover cheesecake in refrigerator.

For Chocolate Buttercream Frosting

- The remainders of Oreo Cookie filling
- A drizzle of Hershey's Chocolate Syrup
- 1/4 cup of butter
-1/2 cup of icing sugar

Mix all and beat at low speed. Put into piping bag and get ready to pipe away!
