Thumbprint Chocolate cookies
Made these for my friend, Priscillia, for her birthday this Monday. These smelt great while in the oven, those quite time consuming to make. The recipe is fairly simple to follow. I found it a bit too sweet so you may cut down on the sugar if you'd like! I would also add more flour or beat the butter more to make it more fluffy. When they cool they become quite hard! I took this recipe from Martha Stewart's cookie recipe book!
Ingredients
1 Cup of Butter ( 250g stick would suffice)
2 1/2 Cups of Plain Flour
1/4 tsp of Salt
1 Cup of confectioner's sugar
2 Tsp of Vanilla Extract
6 Ounces of semi-sweet chocolate
6 Tablespoons of butter
Steps
1. Beat the sugar, butter, salt and vanilla extract. Slowly beat in the flour. If it's a little fluffy, don't worry.
2. Preheat your oven to about 180-200C. Line your cookie trays with baking sheets
3. Roll the dough into small balls and put them on the tray about 1 inch apart from each other
4. Bake the cookies for about 10 mins and remove them from the oven. Use a small tsp to press thumbprint dents into them. Don't press too hard if not you'll have weird flat cookies! They are quite fragile at this point of time. Once done put them back into the oven on the other side and wait for about another 8-10 minutes.
5. Remove them from the tray and cool them. Set aside!
6. Melt the chocolate and remaining butter in a bowl, with the bowl inside boiling water. What i did was put a ceramic bowl in the middle of my saucepan filled with water.
7. Spoon the chocolate into the dents of the cookies and wait for it to cool. :D And voila!
Tips:
I found it easier to put all my melted chocolate into a piping bag where i can accurately pipe the chocolate onto the cookies without making a big mess out of my house and the cookies!
