Beer Battered Fish and Chips for the Mother
This dish was meant to be done for my mother on Mother's Day. Silly me thought that Mother's Day was today but turns out it is next week. By the time I realized I had already bought all the necessary ingredients for the dish - so what the heck!
My father and I discussed what to do for my mom on Mothers' Day and we decided against going out for lunch because we knew the malls were going to be crowded. So I thought, why not I make my mom some Fish and Chips? I know it is her favorite western dish (besides Duck dishes) as she always only orders fish and chips when we dine out.
I pulled myself out of bed at 10am in the morning and started working on the dish.I am following crepesofwrath 's recipe almost to the dot - save that I replaced ground mustard with paprika which worked wonderfully with the chips. I also used plenty of sea salt instead of normal fine salt - it gives you the taste but does not allow the saltiness to linger that makes you crave for water. It is so important to have familiarity with the recipe and the kitchen to do this well. I did my fries first but by the time I finished my prawns and fishes - I had taken too long and my chips turned rather soft.
My parents still gave me the thumbs up though! Both of them loved the dish and commented that it was delicious. But I guess I owe it to an excellent recipe. I was quite amazed at how much beer I put into the batter - but only a little could be tasted. Would definitely cook this dish again but will time myself better!
