Classic Pumpkin Soup
My mother came home last night with a wonderful bag of nice crusty bread and I wondered why, since my parents do not normally dine 'Western'. She said she wanted to buy bags of soup from Soup Spoon, which has a stall just across hers at Bugis Junction. I thought that it'll be quite ridiculous for her to spend what, 8-9 dollars on soup for breakfast so I suggested that I cook a huge pot of nice soup for her and my dad to eat with the bread.
Historically speaking, my parents have always been great skeptics of my food. They are often wary of what I cook, especially if its Western food. I think by now I've managed to impress them quite a bit seeing that I've been getting better with experience!
I had at first, wanted to make Mushroom Soup but my dad hates mushrooms. I remembered booking this recipe by kitchenwench (Insanitytheory.net) for Classic Pumpkin Soup. That was a really long time ago and I must say this soup is absolutely refreshing! I was so afraid it'll be starchy and overtly creamy but the smoothness and light-heartedness was really quite superb! Not much seasoning had to be added because the pumpkin, onions and garlic already do so much.
Please, do try to cook this! Here's a link to the recipe. I cannot stress how simple it is. I've done soups that really quite had me pulling at my hair in frustration, but not this one. If you have a blender at home, you can make all sorts of delicious soup! This is merely one of them. I shall try more again in the future, any suggestions on what other types of soup?
