Crunchy Roasted Chocolate Chip Cookies




  • 150 g sugar
  • 160 g brown sugar, , packed
  • 220 g butter
  • 2 eggs, large
  • 2 tsp vanilla extract
  • 310 g all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 and 1/2 cups semi-sweet chocolate chips
  • 1-2 teaspoons of instant coffee powder (this is optional)
  • 120 g of cereal of your choice. Preferably nutty/crunchy ones
For this recipe, I used Granola's Maple Pecan cereal. I bought this at sheng shiong and I'm sure it can be found in most supermarkets! I sort of adapted this recipe from videojug.com but I failed to get the type of cookies that I wanted, so I improvised!

Step 1:

Mix all the dry ingredients together. Meaning baking soda, flour, sugars, and salt. I try to avoid using a whisk to bake because it's annoying how the particles get stuck and it becomes difficult to wash and impossible to remove. I use a plastic batter spoon or a simple metal serving spoon to mix.

Step 2:

Add in the butter, eggs and vanilla extract. When your mixture is rather smooth and a little gooey, add in the chocolate chips and the cereal. It may seem like a lot of chocolate chip and cereal that you're adding but don't worry, it is necessary to add more of these ingredients for the cookie to hold it's shape. If not you'll end up with a mega cookie when baking

Step 3:
Preheat the oven to about 180-190 C. If you are making mini-cookies, each batch should take about 8-10 mins to bake.

Step 4:
Line your baking tray with baking paper. Take a metal spoon and a knife to make small drops of cookie though all over, making them slightly smaller than the actual cookie size that you want. Think divide by 2. Make sure you leave enough space between the cookies for it to expand.

Step 5:
After your cookies are baked, (when they turn golden brown), remove them from the oven and let it cook for about 5-6 mins before removing them from the paper and placing them on a cooling rack. It is very important to cool your cookies before packing, if not they will become soggy soft sticky cookies!! I like to bake my cookies slightly longer for it to turn into a darker brown because the burnt taste is simply delicious!!

This recipe makes a relatively large batch. So be prepared!
